415: icebox cake

Do you know about Icebox Cake?

I didn't until I met my handsome honey. It is his special birthday cake, and now his son's.

Stuart's son Zach turned 14 last month. Zach has been my little buddy. I met him when he had just turned five! He's now 14 and on his way to high school! So weird.

So, birthday. I made him the requisite cake. Which is really not cake. It is literally cookies and cream. Chocolate cookies and whipped cream, to be exact. It tastes exactly like an ice cream sandwich or cookies n' cream ice cream. Frigging YUM.

You make some fresh whipped cream:

And then you smoosh it onto these Famous Chocolate Wafer Cookies:

And then you stack them up and lay them on their side:

And make like a loaf type shape. And then you 'frost' it with the whipped cream and crush up some cookies on top:

And then you throw it in the fridge for a few hours (the longer the better) and the cream soaks into the cookie and it gets all mushy and then you chow that stuff down, yo.

And if you are lucky, there is a little bit left over and it is amazing for breakfast the next day. I  mean, Im guessing.

My husband's family makes this with graham crackers and whipped cream (they mix a little chocolate syrup into the whipped cream.) His mom even has a rectangular tuppperware container with a lid and everything, so they don't ice the sides but just stuff the container full.

Yes, we used to make this cake. It's tough sometimes now to find those cookies. Occasionally we would add some really well-drained crushed pineapple to the whipped cream.

Yea......it's really hard to say how leftovers would taste. *L*

this is a favourite of my son daniel who is now 18. we call it skunk log because when you cut into it (sideways of course) it reminded him of a skunk when he was little!

My father was raised in Jamaica NY and he ate lots of these! He made this cake for us often and we always called it 'cookie cake'. I now make it for my family regularly only we stack our cookies flat instead of on end...it's truly a family favorite!!

my aunt introduced this cake into our stuffy new england must-make-everything-from-scratch family. it was our secret favorite --don't tell grandma!

my ex's favorite cake was storebought angel food cake with coolwhip frosting. i turned up my nose until i tasted it. add some fresh berries and you're practically a gourmet!

err, nothing like being a year late (and whether this will get read!) BUT down here in oz we have an equivalent called a chocolate ripple cake - the biscuits are chocolate ripples and its exactly the same. except tradition demands that it be topped with crushed up peppermint crisp. This cake is up there with the pavlova. Just discovered your blog and reading thru the posts... Love the honesty and reality. Its very refreshing
